Traditional Dutch Stamppot: A Hearty and Comforting Mashed Pot Dish

 

Here is a classic Stamppot recipe, a traditional Dutch dish made with mashed potatoes and vegetables.

You can make different variations, but the most common is Stamppot Boerenkool (with kale).

Dutch Stamppot Recipe.

Serves: 4.

Prepare Time: 15 minutes.

Cook Time: 25 minutes.

Total Time: 40 minutes.

Ingredients:

1.5 kg (3.3 lbs) potatoes, peeled and cut into chunks

300 g (10.5 oz) kale (or substitute with endive, sauerkraut, or carrots and onions for other variations)

250 ml (1 cup) milk.

50 gram (3.5 tbsp) butter

1 tbsp mustard. (optional, for extra flavor)

Salt and pepper, to taste

4 smoked sausages

200 gram (7 oz) diced bacon. (optional)

Instructions:

Boil the potatoes and kale:

Fill a large pot with water, add salt, and bring to the boil.

Add the potato chunks and kale.

Let everything simmer for about 20 minutes, until the potatoes are tender.

Prepare the sausage:

While the potatoes are cooking, heat the smoked sausage. according to the instructions on the package. (usually 15 minutes in hot water).

Mash everything:

Drain the potatoes and kale.

Add milk and butter and mash everything until smooth.

Stir in mustard, salt and pepper to taste.

Fry the bacon cubes in a separate pan until crispy.

Mix it into the mash for extra flavour.

Serve:

Pour the mash with smoked sausage on the side.

If desired, add a dash of gravy.

Variations:

Hutspot: Use carrots and onions instead of kale.

Zuurkoolstamppot: Use sauerkraut for a spicy twist.

Endivestamppot: Use raw endive for a slightly bitter flavour.
