Kosi
casserole is a traditional Albanian dish made with lamb, yogurt, and eggs, all
baked together in a comforting casserole. The result is a rich, flavorful dish
that is perfect for a family meal or a special occasion.
Ingredients:
For the main course:

500g
lamb (bone-in pieces, such as shoulder or leg, or boneless pieces)

large onion, minced
·
3-4
cloves garlic, minced
·

tablespoons olive oil
·
1
tablespoon paprika (optional)
·
Salt
and black pepper, to taste
·
1
cup water or stock (optional)
·
2
tablespoons flour (for thickening the sauce)
·
Fresh
or dried herbs (such as rosemary, thyme or oregano) to taste
For the yogurt mixture:

cups plain yogurt (preferably full-fat, strained)
·
2
large eggs
·
1
tablespoon flour
·
Salt
and pepper, to taste
Instructions:
Prepare the Lamb:
·
Heat
the olive oil in a large frying pan over medium heat. Large skillet or frying
pan over medium heat.

Add
the lamb pieces and brown on all sides. This should take about 5-7 minutes.

Remove
the lamb from the pan and set aside.
Cook the spices:

In
the same pan, add the minced onion and minced garlic. Sauté for 3-4 minutes,
until the onion is softened and translucent.

Add
the paprika (if using), salt, pepper, and any herbs you like. Stir to combine.
Make the sauce:

Sprinkle
the flour over the onion and garlic mixture. Stir well to coat and cook for
another minute to eliminate the raw flour taste.

Gradually
add the water or stock, stirring to create a smooth sauce. Let simmer for 5-10
minutes to thicken slightly.

Return
the lamb pieces to the pan and stir in the sauce. Cover and cook over low heat
for about 30-40 minutes, or until the lamb is tender and fully cooked.
Prepare the yogurt mixture:

In
a bowl, mix the yogurt, eggs, flour, and a pinch of salt and pepper. This will
create a smooth, thick mixture.
Assemble the Yogurt
Casserole:

Preheat
your oven to 180°C (350°F).
·
Transfer
the lamb and the cooked sauce to a baking dish (preferably a deep, round one).

Pour
the yogurt mixture over the lamb, making sure to spread it evenly. It will form
a creamy layer on top.
Bake the dish:
· Place the baking dish in the oven and bake for 45 minutes to 1 hour, or until the top is golden brown and cooked through. You can check with a fork to make sure the yogurt layer is firm.
Serve:

Let
the Kosi Tavë cool for a few minutes before serving. It can be served with rice
or a simple salad on the side.
