Bacalhau à Brás (Portuguese Cod with Eggs and Potatoes), Portugal

 

This is a classic Portuguese dish made with cod, onions, potatoes and eggs. It's tasty, comforting and easy to make.

Ingredients

 (Serves 4)

·         400g (14 ounces) salted cod, desalted and shredded

·         4 medium potatoes, cut into thin sticks or grated

·         1 large onion, thinly sliced ​​

·         3 cloves garlic, minced

·         4 eggs, lightly beaten

·         4 tablespoons olive oil

·         Black pepper, to taste

·         Salt, to taste (be careful, the cod is already salted)

·         1 handful chopped fresh parsley

·         12 black olives (for garnish)


Instructions

Desalting the cod if you are using traditional salted cod, soak it in cold water for 24 to 48 hours, changing the water every 6 to 8 hours.

After desalinating, drain and shred the cod into small pieces.

Prepare the potatoes

Peel and cut the potatoes into thin sticks (or use a grater).

Fry in hot oil until golden and crispy.

Drain on paper towels and set aside.

Cook the Cod and Onions

Heat the olive oil in a large saucepan over medium heat.

Sauté the onion and garlic until soft and golden.

Add the shredded cod and cook for a few minutes, stirring occasionally.

Combine everything

Add the crispy potatoes to the pan and mix well.

Reduce the heat and add the beaten eggs, stirring constantly. until they are firm but still creamy.








Decorate and serve

Remove from heat, season with black pepper and mix in the chopped parsley.

Garnish with black olives and serve immediately.
