Komplet lepinja
recipe (Serbian specialty)
Komplet lepinja is a
traditional Serbian dish from the Zlatibor region. It is a rich, delicious
bread dish topped with kajmak, eggs and dripping (pretop), then baked until
golden brown.
Ingredients.
(Serving 2-4.)
For the Lepinja.
·
500 gram (4
cups) all-purpose flour
·
250 ml (1 cup)
warm water
·
7 gram (1
packet) dry yeast
·
1 teaspoon
sugar
·
1 teaspoon
salt
·
2 tablespoons
olive oil
For the filling.
·
2 tablespoons
kajmak (or a mixture of butter and cream cheese)
·
2 eggs
· 3 tablespoons pretop (fried meat or butter + beef broth)
Instructions.
Prepare the lepinja.
In a bowl, mix the
warm water, sugar and yeast.
Let stand for 5-10
minutes until foamy.
Add flour, salt and
olive oil. Knead until smooth (about 10 minutes).
Cover and let rise
for 1 hour, until doubled in size.
Preheat oven to 220°C
(430°F).
Divide dough into
portions, shape into loaves and bake for 10-12 minutes until golden brown.
Assemble and bake.
Preheat oven to 200°C
(390°F).
Cut off the top of
each bun, saving it as a lid.
Spread cream over the
bottom half.
Crack an egg on top
and pour over the filling.
Replace the lid and
bake for 5-7 minutes, until the egg is slightly set but still runny.
Serve.
Best served warm with yogurt or a glass of kefir!
