Irish stew is a traditional, hearty dish that is perfect for a cosy meal.

It usually contains lamb or mutton, potatoes, onions and carrots, with simple seasonings.

Here's an authentic recipe:

Ingredients:

·         2 lbs lamb shoulder or neck, cut into large chunks (or mutton for a more traditional flavor)

·         2 tablespoons all-purpose flour (optional, for thickening)

·         Salt and freshly ground black pepper, to taste

·         2 tablespoons vegetable oil or butter

·         4 large potatoes, peeled and cut into large chunks

·         3 carrots, peeled and cut into thick slices

·         2 large onions, sliced

·         2 celery stalks, chopped (optional)

·         3 cups beef or lamb stock (or water)

·         1 bay leaf

·         2-3 sprigs fresh thyme (or 1 teaspoon dried thyme)

·         1 tablespoon fresh parsley, chopped (plus extra for garnish)

Instructions:

Prepare the meat:

Season the lamb chunks with salt and pepper.

If desired, lightly dust with flour for a thicker stew.

Heat the oil or butter in a large pot or Dutch oven over medium heat.

Add the lamb pieces in batches, browning on all sides.

Remove and set aside.

Cook the onions:

In the same pot, add the onions and cook until soft and lightly golden, about 5 minutes.

Layer the ingredients:

Return the lamb to the pot.

Layer the potatoes, carrots, and celery (if using) over the meat.

Sprinkle with parsley, thyme, salt, and pepper.

Pour in the stock or water, making sure it just covers the ingredients.

Add the bay leaf.

Simmer:

Bring the mixture to a gentle boil, and then reduce the heat to low.

Cover the pot and let it simmer for 1.5 to 2 hours or until the meat is tender and the vegetables are soft. Stir occasionally.

Taste the stew and adjust the seasoning with more salt and pepper if necessary.

Serve:

Remove the bay leaf before serving.

Garnish with additional chopped parsley for freshness.

Serve hot with crusty bread or soda bread on the side.









Tips:

For a slightly thicker stew, mash some of the boiled potatoes into the broth before serving.

If you prefer beef, you can substitute lamb, but lamb gives the dish its distinctive Irish flavor.
