For the sauce:

clam
juice, 2 cups, (reserved or bottled)

or light fish stock, 1 cup

Yukon
Gold potatoes, 2 medium, peeled and diced (1.25 cm cubes)

bay leaf
· 1 tbsp fresh thyme (or 1/2 teaspoon dried thyme)
For finishing:

cream,
1 cup 35%
·
1/2
cup whole milk (adjust the amount depending on the desired consistency)
·
Salt
and black pepper, freshly ground (to taste)

a
pinch of white pepper, Optional
· fresh parsley, chopped, 1 tablespoon
👨🍳 Method (Professional Technique)
Preparing the clams (if fresh)
Steam
the clams in a pot with a little water until they open (5 to 7 minutes).
Remove
the meat, roughly chop it,
And
carefully strain the broth to remove any sand.
Reserve the clam meat and juice.
Preparing the Aromatic Base
In
a cast-iron casserole dish or heavy-bottomed saucepan,
Cook
the diced bacon over medium heat until crisp
And
the fat has rendered.
Remove
the bacon and set it aside, leaving the rendered fat in the casserole dish.
Add
the butter to the bacon fat.
👉 This mixture creates a classic, rich, and smoky chowder base.
Sautéing the Aromatics
Add
the onion and celery; sauté them gently (without browning)
For
5 to 7 minutes, until softened.
Stir in the garlic and cook for 30 seconds.
Preparing the Roux
Sprinkle
the flour over the vegetables.
Stir
constantly for 2 to 3 minutes to eliminate the raw flour taste
(do
not brown).

Adding the liquids and potatoes
Gradually
whisk in the clam juice and water or broth to prevent lumps.

the diced potatoes, bay leaf, and thyme.

the potatoes are tender.

Finishing with the cream and clams

in the chopped clams, cream, and milk.

Or the milk may curdle and the clams may become tough.
Final Seasoning
Season
with salt, black pepper,

if desired white pepper.
Remove
the bay leaf.
Stir in the crispy bacon and fresh parsley.
