Judd with

Ingredients (serves 4-6)
For the Judd (Smoked Pork Collar):

1 kg (2.2 lbs) smoked pork neck
(or smoked pork neck)

1 onion, peeled and halved
·
2 bay leaves
·
6-8 black peppercorns
·
Water (enough to cover the
meat)
For the Garden Beans:
·
1 kg (2.2 lbs) fresh broad
beans (or frozen if fresh are not available)
·
1 onion, finely chopped
·
2 tablespoons butter
·
1 tablespoon flour
·
200 ml (7 fl oz) heavy cream
·
Salt and pepper to taste
·
A pinch of nutmeg (optional)
To serve:
Boiled potatoes or crusty bread
Instructions
Cook the Smoked Pork Collar:
Place the
smoked pork collar in a large pot and cover with cold water.
Add the
halved onion, bay leaves, and peppercorns.
Bring to a boil,
and then reduce heat to a simmer.
Skim off any
foam that rises to the surface.
Cover and
simmer for about 1.5 to 2 hours, or until the meat is tender.
Once cooked,
remove the pork from the pot and let it rest for 10 minutes.
Cut it into thick slices.
Prepare the broad beans:
If using
fresh broad beans, peel them from their pods.
Bring a pot
of salted water to a boil and blanch the beans for 2-3 minutes.
Drain and
set aside.
In a large
skillet, melt the butter over medium heat.
Add the
chopped onion and sauté until translucent.
Sprinkle the
flour over the onions and stir to combine, cooking for 1-2 minutes to form a
roux.
Gradually
add the heavy cream, stirring constantly to avoid lumps.
Cook until
the sauce thickens slightly.
Add the
blanched broad beans to the sauce and stir to coat.
Season with
salt, pepper and a pinch of nutmeg, if desired.
Simmer for
5-10 minutes until the beans are tender and the flavors are melding.
Serve:
Arrange
slices of the smoked pork neck on a serving platter.
Serve the
broad beans in a separate bowl or alongside the pork.
Serve with
boiled potatoes or crusty bread to soak up the delicious sauce.
