Mămăligă
(Romanian polenta) Recipe.

15-20 minutes.
Ingredients:

250 g (1 cup) cornmeal (coarse
or medium grind).
·
1 teaspoon salt.
·
1 tablespoon butter (optional,
for creaminess).
·
50 g (¼ cup) grated cheese (optional,
for serving).
· 1 liter (4 cups) water.
Instructions:
Boil the water:
In a large
saucepan, bring 1 liter of water to a boil.
Add the salt
and stir to dissolve.
Slowly add the cornmeal:
Reduce the
heat to low.
Gradually
add the cornmeal in a steady stream while stirring constantly with a wooden
spoon or whisk to avoid lumps.
Cook and Stir:
Continue to
stir and cook for about 15 to 20 minutes, until the mixture thickens and pulls
away from the sides of the pan.
Serve:
For a softer
Mămăligă, serve immediately while it is still hot.
For a firmer texture, pour the Mămăligă onto a wooden board or plate, let it cool for a few minutes, then cut into slices with a string or knife.
Optional Additions:
Toss with
butter for a richer taste.
Top with
grated cheese, sour cream, or fried eggs for extra flavor.
Mămăligă
pairs well with sarmale (stuffed cabbage rolls), tochitură (pork stew), grilled
sausages, or simple sour cream and cheese.
