• Warm whole milk, 2 cups

• granulated sugar, 1/4 cup

• Salt, 1 teaspoon

• 1 large egg

• softened unsalted butter, 1/4 cup

For the Filling:

• Ground beef, 900 gram (preferably 80/20)

• Green cabbage, 1 medium, finely shredded

• Yellow onion, 1 large, finely chopped

• Kosher salt, 2 teaspoon

• Black pepper, 1 teaspoon

• Garlic powder, 1 teaspoon

• Paprika, 1/2 teaspoon

• Butter, 2 tablespoons

For finishing

• 1 egg beaten with 1 tablespoon water

• Melted butter for brushing after baking

Equipment needed

• Large bowl

• Stand mixer (optional)

• Large skillet or Dutch oven

• Rolling pin

• Baking sheets

• Parchment paper

• Pastry brush

Step 1: Preparing the dough

In a large bowl, combine the warm milk, sugar, and yeast.

Stir gently and let the mixture rest for 5 to 10 minutes, until frothy.

Add: the egg, softened butter, and salt.

Mix until a smooth dough forms.

Gradually add the flour, one cup at a time, mixing well.

Continue kneading for about 8 to 10 minutes, until the dough is: Smooth, elastic, slightly sticky, but not gooey.

If using a stand mixer, knead with the dough hook on medium speed for about 6 minutes.

Place the dough in a lightly oiled bowl.

Cover with plastic wrap or a clean kitchen towel.

Let rise in a warm place for 60 to 90 minutes, or until doubled in size.

Step 2: Preparing the Traditional Filling for Runzas

While the dough is rising, prepare the filling.

Heat a large skillet over medium-high heat.

Add the ground beef and brown it.

Break the meat.

Drain off any excess fat, if necessary.

Add the butter and diced onion.

Cook for 5 minutes, until the onions are soft.

Gradually add the shredded cabbage.

At first, there may seem to be a lot of cabbage,

but it will quickly reduce in size.

Season with salt, black pepper, garlic powder, and paprika.

Cook for 15 to 20 minutes, stirring frequently.

The cabbage should become tender and slightly sweet,

And most of the moisture should evaporate.

The filling should be soft, but not soggy.

Let the mixture cool completely before filling the Runzas.

Step 3: Divide and Shape the Dough

Deflate the risen dough.

Transfer the dough to a lightly floured surface.

Divide it into 12 equal portions.

Roll out each portion into a rectangle approximately:

15 cm wide

20 cm long

Keep the remaining dough covered while preparing the rest of the dough.

Step 4: Filling the Runzas

Place about 175 ml of filling in the center of each rectangle.

Don't overfill.

Fold the long sides over the filling.

Pinch the seam firmly.

Fold and pinch the ends to seal.

The final shape should resemble stuffed bread.

Place the Runzas, seam-side down, on baking sheets lined with parchment paper.

Leave about 5 cm of space between each Runza.

Step 5: Second Rise

Cover the Runzas loosely with a cloth.

Let them rise for 20 to 30 minutes.

This step helps achieve the light and fluffy texture characteristic of authentic Nebraska Runzas.

Preheat the oven to 190°C (375°F).

Step 6: Egg Wash

Lightly brush each Runza with the beaten egg.

The egg wash promotes:

• A beautiful golden color

• A glossy finish

• A crispier crust

Step 7: Baking

Bake for 22 to 25 minutes.

The top should be:

• Deep golden brown

• Slightly shiny

• Firm to the touch

The internal temperature should reach at least 74°C (165°F).

Step 8: Finishing and Serving

Remove from the oven.

Immediately brush the top with melted butter.

Let cool for 10 minutes before serving.

This helps retain the softness of the crust and enhances the flavor.

Chef's Tips for Perfect Runzas:

Let the filling cool.

A warm filling can soften the dough and make shaping difficult.

Remove excess moisture.

Cook the cabbage beforehand to prevent the bread from becoming soggy. Don't overfill.

Too much filling can cause the edges to burst during baking.

Seal tightly.

Pinch the edges firmly to prevent leaks.

Freezing: Runzas freeze very well.

Wrap them individually and freeze for up to 3 months.

Reheat them directly from frozen at 175°C (350°F) for 20 to 25 minutes.

Serving Suggestions:

Serve Runzas with:

• Dill pickles

• Potato chips

• French fries

• Coleslaw

• Mustard

• Ranch dressing

Refrigeration: Store in an airtight container for up to 4 days.

Freezing: Freeze cooked Runza for up to 3 months.

Reheating: Bake at 350°F (175°C) for 10 to 15 minutes, until heated through.

Avoid microwaving if possible to preserve the crust's texture.

What makes Nebraska Runzas so special?

The combination of a soft bun, savory beef, cooked cabbage, and onions makes for a complete meal, all wrapped in a crispy pastry.

German-Russian immigrants brought similar recipes to the Great Plains, where the Runza became one of Nebraska's signature dishes.

The filling remains simple, generous and deeply satisfying: ideal for family meals, dinners or sporting evenings.
