🍲 Instructions
Cook the Rice
Rinse
rice in cold water until water runs nearly clear.
Add
rice + water + salt to a rice cooker or a pot.
Cook
until fluffy.
Fluff with fork and let rest 10 minutes covered.
Prepare the Beef Patties
Ground
beef, minced onion, garlic, egg, panko, soy sauce, Worcestershire, salt +
pepper.
Mix
gently with hands—do not overwork the meat to keep patties tender.
Form
into 4 equal patties, slightly larger than the bun-size (they shrink).
Heat oil in a heavy pan (cast iron works best).
Sear patties:
3–4
minutes per side
Get
a deep brown crust
Remove patties and keep warm — do NOT clean the pan (the fond = flavor).
Make the Brown Gravy
In
the same pan, add butter + oil.
Add
chopped onion; sauté until soft and lightly caramelized.
Add
garlic; cook 30 seconds.
Sprinkle
flour over the onions; stir to make a light roux.
Slowly
whisk in beef stock until smooth.
Add
soy sauce + Worcestershire.
Simmer
5–7 minutes until thickened and glossy.
Season
with salt & pepper.
Chef Tip: A perfect Loco Moco gravy is silky, dark, and slightly tangy.
Fry the Eggs
Heat
butter or oil in a nonstick pan.
Crack
eggs gently.
Cook
on low heat until whites set but yolks remain runny.
Season lightly with salt and pepper.
🍽 Assemble the Loco Moco
For each plate:
Scoop
a bed of hot rice (1 to 1½ cups).
Place
one seared beef patty on top.
Spoon
a generous amount of rich brown gravy over the patty and rice.
Place
a runny fried egg on top.
Garnish with green onions or crispy onions if desired.
🌈 Serving Tips
Loco
Moco should be eaten immediately—the egg yolk and gravy should blend into the
rice.
Add
a side of Hawaiian macaroni salad for a fully authentic plate lunch experience.
For extra depth, mix 50% beef stock + 50% mushroom stock in the gravy.
