Ingredients
For
the broth:

lbs beef bones (e.g., beef bones or brisket)

lb pork bone (e.g., shoulder or bone)

piece of chicken or turkey (about 1 lb)

large garlic clove, halved

carrots, thinly sliced

leek, sliced and
diced

wild celery

turnip, peeled and cut into slices

potato, peeled and halved

small cabbage, quartered

the meatballs (optional):

lb pork chops
·
1/2
lb ground beef
·

garlic clove, chopped

tbsp chopped parsley

egg
·
2
tbsp bread crumbs

Salt
and pepper
Other
ingredients included:

cup dried beans (soaked overnight)
·
1
cup rice pasta (optional)
Instructions:
Make the Broth:
Place
beef bones, pork bones, chicken, and ham bones in a large bowl. Cover with 3-4 litters
of water. Bring to a boil, and remove any lumps or debris.
Cook the vegetables:
Add the
garlic, carrots, leeks, celery, turnips, potatoes, and cabbage to the pot. Add
salt, reduce heat, and let the liquid simmer gently for 2-3 hours. Ted the
beans, in a separate pot; cook the sweet potatoes until tender, 1-1.5 hours.
Put it away.
Prepare Meatballs (Optional)
Combine ground pork, ground
beef, garlic, parsley, egg, breadcrumbs, salt, and pepper in a bowl. Form the
mixture into small balls and set aside. Combine the ingredients About 30
minutes before the water boils, add the meatballs, beans, and pasta or rice (if
using) to the pot. Share Soup and Stew. Once done cooking, strain the liquid
into a broth. Serve meats, vegetables, and steaks as a second course.
Bring
the boiling water to a bowl, and serve with pasta or rice if desired.
