Ingredients

For the broth:

 

·         2 lbs beef bones (e.g., beef bones or brisket)

·         1 lb pork bone (e.g., shoulder or bone)

·         1 piece of chicken or turkey (about 1 lb)

·         1 piece of well-done steak bone

·         1 large garlic clove, halved

·         2 carrots, thinly sliced

·         1 leek, sliced ​​and diced

·         1 wild celery

·         1 turnip, peeled and cut into slices

·         1 potato, peeled and halved

·         1 small cabbage, quartered

 

For the meatballs (optional):

 

·         1/2 lb pork chops

·         1/2 lb ground beef

·         1 garlic clove, chopped

·         2 tbsp chopped parsley

·         1 egg

·         2 tbsp bread crumbs

·         Salt and pepper

 

Other ingredients included:

 

·         1 cup dried beans (soaked overnight)

·         1 cup rice pasta (optional)


Instructions:

Make the Broth:

 

Place beef bones, pork bones, chicken, and ham bones in a large bowl. Cover with 3-4 litters of water. Bring to a boil, and remove any lumps or debris.

Cook the vegetables:

Add the garlic, carrots, leeks, celery, turnips, potatoes, and cabbage to the pot. Add salt, reduce heat, and let the liquid simmer gently for 2-3 hours. Ted the beans, in a separate pot; cook the sweet potatoes until tender, 1-1.5 hours. Put it away.
